Instructions

  1. In a large pot, heat some oil over medium heat and add chopped onions, carrots, and celery. Cook until softened.
  2. Add the chicken thighs to the pot along with salt, pepper, thyme, and enough chicken broth to cover everything. Let it simmer for about 20 minutes until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the pot. Stir in more broth if necessary to achieve the desired consistency.
  4. Prepare the dumpling mix according to package or recipe instructions and drop spoonfuls into the simmering broth.
  5. Cover the pot and cook for an additional 15-18 minutes, or until the dumplings are fluffy and cooked through.
  6. Once cooked, stir gently to combine and serve hot.
