Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and cube the sweet potatoes, toss them with olive oil and seasoning, and spread onto the baking sheet.
- Roast sweet potatoes for 25-30 minutes or until tender and lightly browned.
- While the potatoes are roasting, slice bell peppers and onions, and prepare spinach and avocado.
- Once potatoes are done, assemble your wrap with roasted sweet potatoes and fresh veggies.
- Roll the wrap tightly and cut in half to serve immediately or store for later!
