Ingredients

  • Sweet Potatoes
  • Whole Wheat Wraps
  • Bell Peppers
  • Red Onion
  • Spinach Leaves
  • Avocado
  • Olive Oil
  • Your Favorite Seasoning

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and cube the sweet potatoes, toss them with olive oil and seasoning, and spread onto the baking sheet.
  3. Roast sweet potatoes for 25-30 minutes or until tender and lightly browned.
  4. While the potatoes are roasting, slice bell peppers and onions, and prepare spinach and avocado.
  5. Once potatoes are done, assemble your wrap with roasted sweet potatoes and fresh veggies.
  6. Roll the wrap tightly and cut in half to serve immediately or store for later!
