Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, combine the mashed sweet potatoes, milk, and honey, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, sugar, and salt.
  4. Cut the cold butter into the dry mixture until it resembles coarse crumbs.
  5. Pour the sweet potato mixture into the dry ingredients and stir until just combined.
  6. Dollop the dough onto the prepared baking sheet, forming small biscuits.
  7. Bake for about 15-20 minutes, or until golden brown on top.
