Description

Pomegranate Molasses Roasted Carrots are a flavorful and visually appealing side dish. The tangy sweetness of the pomegranate molasses enhances the natural sweetness of the carrots.

Ingredients

  • Fresh Carrots
  • Pomegranate Molasses
  • Olive Oil
  • Cumin
  • Salt & Pepper
  • Fresh Herbs (Parsley or Mint)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine pomegranate molasses, olive oil, cumin, salt, and pepper. Stir well to create the glaze.
  3. Add the peeled and cut carrots to the bowl, tossing them in the glaze until well-coated.
  4. Transfer the carrots onto the prepared baking sheet, spreading them evenly out to ensure they roast rather than steam.
  5. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the carrots are tender and caramelized.
  6. Once done, remove from the oven and garnish with fresh herbs before serving.

Notes

  • Cut carrots evenly for uniform cooking.
  • Adjust sweetness to your preference if desired.
  • Use fresh, organic produce for optimal flavor.
