Description

This Pomegranate Glazed Chicken recipe combines tender chicken with a sweet and tangy glaze, making it a flavorful and easy dish for any night of the week.


Ingredients

  • Boneless Chicken Thighs
  • Pomegranate Juice
  • Honey
  • Garlic
  • Salt and Pepper
  • Olive Oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine pomegranate juice, honey, minced garlic, salt, pepper, and olive oil to create the marinade.
  3. Place the chicken thighs in a resealable plastic bag and pour the marinade over the chicken. Seal and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  4. Remove the chicken from the marinade, reserving the liquid. Place the chicken on the prepared baking sheet.
  5. Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  6. In a small saucepan, bring the reserved marinade to a boil over medium-high heat, then reduce to a simmer. Cook until thickened, about 5-7 minutes.
  7. Brush the thickened glaze over the baked chicken, and return to the oven for an additional 5 minutes, allowing the glaze to caramelize.
  8. Serve hot, garnished with pomegranate seeds and a sprig of fresh parsley if desired.
