Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
- In a bowl, mix together graham cracker crumbs and melted butter until combined, then press evenly into the bottom of each muffin liner.
- In a mixing bowl, beat softened cream cheese with sugar until smooth and creamy.
- Add in limoncello, sour cream, vanilla extract, and egg, mixing until fully integrated and fluffy.
- Pour the cheesecake mixture over the crust in each muffin liner, filling them about 3/4 full.
- Bake for about 18-20 minutes or until the centers are set but still slightly jiggly.
- Let the cheesecakes cool, then refrigerate for at least 2 hours before serving.
