Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the chuck roast generously with salt and pepper on all sides. Heat a large skillet over medium-high heat and sear the roast on all sides until browned. This should take about 3-4 minutes per side.
  3. In a large oven-safe pot or Dutch oven, add the seared roast, onions, carrots, and potatoes. Pour beef broth over the top until vegetables are just covered.
  4. Sprinkle garlic powder, thyme, and rosemary over the roast and vegetables. Cover the pot with a lid.
  5. Bake in the preheated oven for about 3 hours, or until the meat is tender and easily pulls apart with a fork.
  6. Remove the pot from the oven, uncover it, and sprinkle the melted cheese evenly over the top of the roast. Return to the oven for an additional 10-15 minutes, or until the cheese is bubbling and golden brown.
  7. Serve hot, garnished with fresh herbs if desired.
