Instructions
- Preheat your oven to 325°F (160°C).
- Season the chuck roast generously with salt and pepper on all sides. Heat a large skillet over medium-high heat and sear the roast on all sides until browned. This should take about 3-4 minutes per side.
- In a large oven-safe pot or Dutch oven, add the seared roast, onions, carrots, and potatoes. Pour beef broth over the top until vegetables are just covered.
- Sprinkle garlic powder, thyme, and rosemary over the roast and vegetables. Cover the pot with a lid.
- Bake in the preheated oven for about 3 hours, or until the meat is tender and easily pulls apart with a fork.
- Remove the pot from the oven, uncover it, and sprinkle the melted cheese evenly over the top of the roast. Return to the oven for an additional 10-15 minutes, or until the cheese is bubbling and golden brown.
- Serve hot, garnished with fresh herbs if desired.
