Instructions
- Start by rinsing 1 cup of quinoa under cold water to remove its natural bitterness.
- In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed.
- While the quinoa is cooking, prepare the vegetables: cut the cherry tomatoes in half, dice the cucumber, thinly slice the red onion, and chop the olives.
- In a large bowl, combine the cooked quinoa with the chopped vegetables.
- Crumble feta cheese over the mixture and sprinkle with dried oregano.
- Drizzle with olive oil and freshly squeezed lemon juice, then gently toss everything together until evenly coated.
- Serve the quinoa bowls immediately or store them for later use.
