These Healthy Lasagna Bites are a delicious and nutritious twist on traditional lasagna — packed with layers of veggies, turkey, and cheese!


Ingredients

  • Zucchini
  • Lean Ground Turkey
  • Ricotta Cheese
  • Shredded Mozzarella
  • Marinara Sauce
  • Fresh Spinach
  • Italian Seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a skillet, cook the lean ground turkey over medium heat until browned, seasoning it with Italian seasoning.
  3. Lay out the zucchini slices and spoon a layer of the cooked turkey, ricotta cheese, spinach, marinara sauce, and shredded mozzarella inside each slice, rolling them up tightly.
  4. Place each zucchini roll in the muffin tin, standing up.
  5. Top with additional marinara sauce and mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes until cheese is bubbly and golden.
