Ingredients

  • Shortcrust Pastry
  • Milk
  • Vanilla Extract
  • Egg Yolks
  • Granulated Sugar
  • Strawberries
  • Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Roll out the shortcrust pastry and fit it into a tart pan, trimming any excess dough.
  2. Prick the bottom of the pastry with a fork and bake for 15-20 minutes, or until golden brown. Let it cool completely.
  3. In a saucepan, heat the milk and vanilla extract over medium heat until just simmering. In a bowl, whisk together the egg yolks and sugar until light and creamy.
  4. Slowly add the hot milk mixture to the egg mixture, whisking continuously to temper the eggs. Strain the custard back into the saucepan.
  5. Cook the custard over medium heat, stirring constantly until it thickens and coats the back of a spoon. Remove from heat and let it cool slightly.
  6. Pour the custard into the cooled tart shell and spread it evenly. Chill in the refrigerator for at least 2 hours to set.
  7. Before serving, top the tart with fresh strawberries and dust with powdered sugar if desired. Serve chilled and enjoy!
