Instructions

  1. Start by preheating your oven to 350°F (175°C). Prepare a tart pan by greasing it lightly.
  2. In a mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water until a dough forms.
  3. Press the dough into the prepared tart pan, and prick the bottom with a fork to prevent bubbling. Bake for 20-25 minutes or until golden brown. Allow to cool.
  4. For the pastry cream, heat the milk in a saucepan. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth. Gradually add the hot milk to the egg mixture, then return to the saucepan and cook until thickened. Stir in vanilla extract and cool.
  5. Once the tart shell is cool, fill it with the pastry cream, smoothing it evenly. Top with fresh strawberries, blueberries, and raspberries.
  6. Warm apricot jam slightly and brush it over the berries for a beautiful glaze. Chill in the refrigerator for at least one hour before serving.
