Ingredients
- All-Purpose Flour
- Milk
- Egg
- Baking Powder
- Fresh Kiwi
- Sugar
- Butter
Instructions
- In a mixing bowl, combine the flour, sugar, baking powder, and a pinch of salt.
- In another bowl, whisk together the egg and milk. Melt the butter and allow for cooling before adding to the mixture.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in diced kiwi until evenly distributed.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- For each pancake, pour 1/4 cup of batter onto the skillet. Cook until bubbles form and edges look set (2-3 min).
- Flip pancakes and cook for an additional 2-3 min until golden brown.
- Remove and keep warm; repeat with remaining batter.
- Serve warm with chosen toppings.
Notes
- Don’t overmix the batter for fluffier pancakes.
- Use ripe kiwis for the best flavor.
