Ingredients

  • All-Purpose Flour
  • Milk
  • Egg
  • Baking Powder
  • Fresh Kiwi
  • Sugar
  • Butter

Instructions

  1. In a mixing bowl, combine the flour, sugar, baking powder, and a pinch of salt.
  2. In another bowl, whisk together the egg and milk. Melt the butter and allow for cooling before adding to the mixture.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Gently fold in diced kiwi until evenly distributed.
  5. Heat a non-stick skillet over medium heat and lightly grease with butter.
  6. For each pancake, pour 1/4 cup of batter onto the skillet. Cook until bubbles form and edges look set (2-3 min).
  7. Flip pancakes and cook for an additional 2-3 min until golden brown.
  8. Remove and keep warm; repeat with remaining batter.
  9. Serve warm with chosen toppings.

Notes

  • Don’t overmix the batter for fluffier pancakes.
  • Use ripe kiwis for the best flavor.
