Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery, cook for about 5 minutes until softened.
- Add minced garlic; stir for another minute until fragrant.
- Include diced chicken breast; cook until browned, about 5-7 minutes.
- Sprinkle in wild rice and dried thyme, then pour in chicken broth; bring to a boil.
- Reduce heat, cover, and let simmer for about 30 minutes until the rice is tender.
- Stir in heavy cream, and season with salt and pepper. Let simmer for an additional 5 minutes.
- Serve hot, garnished with fresh parsley if desired.
