Instructions
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add coconut milk and eggs to the bowl and whisk.
- In another bowl, mix flour, shredded coconut, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients.
- Heat a skillet and lightly grease it.
- Pour 1/4 cup of batter onto the skillet and cook until bubbles form.
- Flip pancakes and cook until golden brown.
- Serve warm with toppings.
