Ingredients

  • Andouille Sausage
  • Chicken
  • Bell Peppers
  • Onions and Celery
  • Garlic
  • Diced Tomatoes
  • Chicken Broth
  • Okra
  • Creole Seasoning
  • Bay Leaves

Instructions

  1. In a large heavy pot or Dutch oven, heat olive oil over medium heat. Add the sliced sausage and brown for about 5 minutes. Remove and set aside.
  2. Add onions, celery, and bell peppers to the pot; sauté until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
  3. Return the sausage to the pot. Add the diced tomatoes, chicken, and broth; stir to combine.
  4. Sprinkle in the Creole seasoning and bay leaves, then bring the mixture to a simmer. Cover and reduce the heat to low, cooking for an hour.
  5. After one hour, add okra and simmer for an additional 30 minutes. Stir occasionally. Adjust seasoning if needed, and remove bay leaves before serving.
  6. Serve hot with cooked rice and green onions as garnish.

  • Let the gumbo rest overnight for flavors to meld.
