Ingredients
- Andouille Sausage
- Chicken
- Bell Peppers
- Onions and Celery

- Bay Leaves
Instructions
- In a large heavy pot or Dutch oven, heat olive oil over medium heat. Add the sliced sausage and brown for about 5 minutes. Remove and set aside.
- Add onions, celery, and bell peppers to the pot; sauté until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
- Return the sausage to the pot. Add the diced tomatoes, chicken, and broth; stir to combine.
- Sprinkle in the Creole seasoning and bay leaves, then bring the mixture to a simmer. Cover and reduce the heat to low, cooking for an hour.
- After one hour, add okra and simmer for an additional 30 minutes. Stir occasionally. Adjust seasoning if needed, and remove bay leaves before serving.
- Serve hot with cooked rice and green onions as garnish.
