Instructions

  1. In a medium saucepan, combine granulated sugar, cornstarch, unsweetened cocoa powder, and salt. Whisk together until blended.
  2. Gradually whisk in milk. Cook over medium heat, stirring constantly until the mixture thickens and starts to boil.
  3. In a separate bowl, whisk the eggs. Slowly add a bit of the hot chocolate mixture to the eggs, whisking constantly to temper them.
  4. Pour the tempered egg mixture back into the saucepan, continue cooking while stirring for an additional minute.
  5. Remove from heat and stir in vanilla extract. Pour the filling into the baked pie crust and let it cool to room temperature.
  6. Once cooled, prepare the whipped cream by beating heavy whipping cream and sugar until soft peaks form.
  7. Spoon the whipped cream over the cooled pie, smoothing it into an even layer.
  8. Decorate with chocolate shavings if desired, and refrigerate until set.
  9. Slice and serve as a delightful ending to any meal!
