  • Chicken Broth: Low-sodium chicken broth.
  • Spices: Cajun seasoning, paprika, thyme, salt, and pepper.

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat. Add the diced chicken and sausage, and cook until browned and cooked through, about 5-7 minutes.
  2. Add the chopped onion, bell peppers, and minced garlic to the pot. Sauté until the vegetables are soft, about 5 minutes.
  3. Stir in the rice and pour in the chicken broth. Add your Cajun spices, stirring to combine.
  4. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, until the rice is cooked.
  5. In the last 5 minutes, gently fold in the shrimp until they turn pink.
  6. Sprinkle cheese on top, cover, and let it sit to melt.
  7. Serve hot with fresh parsley.
